The Best Raw Carrot Cake with Maple Cashew Frosting

I realize it’s been a long time since I posted a recipe, but, better late than never, yes? So, here we go. I have a gem for you.

This one is super easy to make. It’s delicious, with a fun texture, and is way healthy to boot.

No wheat or gluten, very little sugar, no dairy, and made with raw ingredients which are excellent for your health.

Yes, it’s raw, which means that texture-wise, it will not be comparable to cake made with flour, however, this aside, the taste is fantastic. Don’t take my word for it, though. Whip it up and taste yourself. I don’t think you’ll be disappointed.

This is a cake you need not feel guilty about eating!

Tempeh Teriyaki Quinoa Bowl

This umami inducing, oh-so-scrumptious and satisfying, totally-hits-the-spot entree is one on which you will soon be hooked.  It’s also incredibly healthy, made with a base of quinoa (gluten/grain-free, as this is actually a seed), scallions, red cabbage, marinated tempeh, and then though not pictured, I recommend it topped with a fried egg.  SO good, a cinch to make, and with flavors that pack a punch.

Paleo Vanilla Cupcakes

Man, oh man, are these fluffy, moist, and totally tasty.  Super easy to make, and I was stunned of their texture being exactly the same as any other cupcake.  One cannot tell the difference between these and cupcakes made with flour.  Thus, why not then make the healthier cupcake, if there is no sacrifice of taste?  Your body and health will thank you for it 🙂

Gluten-free/grain-free, lactose-free, and with only honey used for sweetener, these are a cupcake you can feel far better about eating!

Gluten free and Low Sugar Chocolate Cheesecake

Happy Wednesday, all!

This chocolate cheesecake is the perfect guilt-free (or nearly ;-)) treat.  Made with no added sugar (honey aside), its gluten free (sans crust), though is decadent and delicious.  Swirled through with Greek yogurt and bittersweet chocolate.  This is a cheesecake you can feel significantly better about eating, as opposed to the traditional versions (which are far more laden with sugar, usually with a gluten-based crust, and more fat).

Less Sugar Triple Chocolate Mousse

Happy Monday, all!  The perfect Monday treat: triple chocolate mousse.  Though this is a version you can feel far less guilty on eating.  Oh man, is this decadent and delectable.  Dont take my word for it though.  Try it out yourself, its a cinch to whip up.

Paleo Blueberry Buckle Cake

Oh my gosh, is this stuff tasty!  Initially I worried about it being a bit bland or of an odd texture, as its made with almond and coconut flours.  However, the end result was a moist, cinnamon-y, lightly sweet, blueberry laden, divine cake!  Or, blueberry buckle, if you will.

While slightly involved, its overall, an easy one to toss together.  A fun interplay of textures going on here too, with the crunch of walnuts on top, the spongy cake texture, the burst of fresh berries on biting into them.

On whipping this up, you will be gifted with having something scrumptious to accompany your wintery warm drinks with each afternoon for the week.  Enjoy!

Apple Nachos

Dessert nachos!  I realize this is a bit of a cheat recipe, given there arent really instructions needed.  Still, I hadn’t considered this as a snack possibility until stumbling upon it online, then, like a light bulb, found myself delighted and excited by this new snack idea.  Its surprisingly very satisfying.

Decadent, Delicious, and Healthy Cakes

Happy Wintery, Snowy Monday, my fellow dessert devotees,

Get excited for a roundup below of the most scrumptious, tastiest cakes you have ever sampled.  All of which fall under at least one (though many fall under more) of the following tiers: grain-free, gluten-free, lactose-free, low in sugar, or sugar-free.

Cake you can actually feel semi good about eating!  Though on tasting any of these, I have a sense you will feel awesome about eating them at that point 😉

Chocolate cheesecake.  This version is lower in sugar than the usual cheesecake, by far.  And can be made gluten-free if you desire.

Healthier chocolate mousse.  This one has been a major hit in our home ;-).  With much less sugar than usual mousse recipes, plus Greek yogurt for a creamy, protein-packed punch.

Walnut cardamom cake with cinnamon buttercream frosting.  SO good.  This one has zero gluten/grains.  The perfect, lightly spiced, cold-weather cake.

Paleo pumpkin pie.  Taking a classic, quintessential dish and making it one you dont have to feel nearly as guilty eating.  The crust on this one?  The bomb.  Like eating an almond flavored sugar cookie.  Gluten/grain free, and low in sugar.
