Melt-in-your-mouth Pumpkin Cookies

Hi all,

I know, with Spring underfoot, you are likely thinking of flavors more along the lines of fruity, light, juicy, and with just the barest hints of sweet.  I am too.  I am awaiting the summery season with bated breath.  However in the meantime, there are still several more chilly winter(ish) weekends remaining and for those, I am a strong advocate for all things pumpkin.  One of my favorite ingredients with which to cook.  Pumpkin is the bomb.  You can make SO many mouthwatering things with this delicious addition.  The list is endless, but to name a few: Pumpkin cookies, pumpkin cheesecake, pumpkin pancakes, pumpkin lattes, pumpkin macaroni and cheese, pumpkin bread, pumpkin risotto, etc.

Pumpkin is not only awesome for your health but its homey and delicious.  In fact on its own, pumpkin doesn’t have a strong taste, so its easy to stir into loads of different things without being overwhelmed by intense flavor.  Pumpkin is a more mild form of deliciousness.

Blueberry & Blackberry Tart with Vanilla Cream

As the days gradually grow warmer, granted they are taking their sweet time in doing so, I am a firm believer that milder temperatures call for something fruity and light.  Fruity and light coincides perfectly with the ushering in of the summer season.

Behold, my berry tart.  A super cinch to make and, if this is any validation, the entire thing was polished off in one sitting at my tea party this past weekend 😉

Earl Gray Brownie Pudding

Brownies and pudding.  Two of the best desserts ever.  Were you one of the kids who loved eating raw brownie dough?  I certainly was, and with enthusiasm.  No shame there.  This recipe offers a revisiting of that childhood nostalgic deliciousness.  Mouthwatering.  Fudgy.  Rich.  Decadent.  And ultra easy to make.  Get excited!!

Matcha Cake with Buttercream & Raspberry Frosting

Hi all!  I realize its been a while since a recipe has appeared on this blog.  But good things come to those who wait, and I have several recipes, the results from my kitchen experiments that took place over this past weekend, ready and about to come your way.

I have been on a major kick with regard to all things Matcha, which those of you who have read through my other recipes are aware of.  Not only for the fact that I love green tea, but also because its amazing for your health!!

I was skeptical when baking up this particular Matcha cake, worried it wouldn’t come out tasting as delectable as I hoped.  I was especially anxious because I would be serving it to friends with high expectations 😉  However I was relieved to find this cake immediately claimed as the favorite sweet on the table!!!

Matcha Raspberry Pancakes

Matcha is majorly trending right now, as I am sure you have noticed.  Matcha tea, matcha lattes, matcha desserts, matcha truffles, matcha smoothies.  That’s because supposedly Matcha (a super concentrated form of green tea) is AWESOME for you.

Just a few of the said benefits: its high in antioxidents, enhances ones sense of calm, boosts memory and concentration, boosts endurance, can help clear up skin, detoxifies the body, strengthens the immune system, the list goes on.

Man oh man, for all these noteworthy benefits, how could someone not add a bit of this super powered tea to their diet?

Lavender & Honey Scones

Hi all,

For those of you who have followed my recipes thus far, you may have noticed I have a slight love affair with lavender.  I love using it in pancakes.  Lavender paired with either honey or blueberries is especially lovely.  I decided to whip up some scones for breakfast this weekend using this favorite flavor of mine.  The result was delish.

Pomegranate and Dark Chocolate Bowl

I realize this is a slight cheat as this isn’t exactly a recipe.  It is however one of the most bomb snacks in the world.  The perfect combination of slightly tart, juicy goodness with little bits of dark chocolate mixed in making for one ultra healthy and really dang delicious treat.

Pomegranate is AWESOME for you, in case you didn’t know.  They help with clearer skin and reducing inflammation.  They have antioxidant, anti-viral and anti-tumor properties.  To check out more of the benefits this super fruit offers, here you go.
