Edinburgh Mist French Toast

Named after one of my favorite European cities.  Edinburgh making me think of words like…dark…romantic…lovely…haunting…misty…soot covered…magical.  This French Toast is sweet, ever so subtly spiced, fluffy, and totally tasty.  Making for a special, impressive, yet shockingly easy brunch/breakfast entrée.  Impress your friends and family with this one, all while moaning in deliciousness every bite.

Mostly Healthy Matcha Truffles

Happy Sunday, all!

As you know, Matcha is having a moment right now.  Majorly trendy and for good reason.  Its amazing for your health.  Boosting all sorts of benefits such as: helping to clear skin, strengthening immune system, increasing energy.  The list goes on.

Matcha also tastes awesome when paired with chocolate, as well as with berries.  To name two of the fabulous pairings with this superfood discovered within my own cooking and baking experiments.  Matcha French Toast and Matcha Pancakes with Raspberry and Chocolate Chips, two bombastic dishes within the last couple of months.

Pumpkin Chia Cinnamon Oatmeal

Pumpkin Pasta Bake

Yes, yes, I know, another pumpkin dish.  But hear me out.  Not only does pumpkin taste great but its amazing for you!!

Just to name a few of the phenomenal health benefits that pumpkin offers…

Banana Chia Oatmeal

Hi all,

Here’s one for all you healthy eaters out there who simultaneously don’t want to give up delicious comfort food.  This dish is gluten-free, lactose-free, sugar-free, filling and delightful.  Optional add-ins include peanut butter, sunflower butter, honey, chocolate chips, you name it.  Hearty, so yummy, lightly sweet yet healthy.  Enjoy!!

Raspberry Chia Jam

Jam is just the best on so many things.  Delicious on all manner of bread and cakes.  Its especially tasty on chocolate desserts.  This raspberry jam pairs perfectly with my chocolate zucchini cake/brownies.  The best part of this jam?  Its sugar-free, not like the store bought ones which are laden with it.  This one is light, sweet and lovely.

Chocolate Avocado Frosting

Ready for a frosting made with good-for-you ingredients and zero sugar?  Yet, it tastes like a typical creamy, rich, sweet frosting.  Delicious.  This could also be eaten as is, instead of used to top a cake.  A makeshift chocolate pudding, if you will.  Either way, totally yummy.

Fudgy Zucchini Cake/Brownies

Happy weekend, all!

The weekends call for long, luxurious meals.  Laughter with friends.  Afternoons spent whiled away in bookstores.  Huge mugs of tea.  Brunching.  Walks outside (especially with this weather!).  And something decadent and delicious for dessert.

What if I told you I had the ultimate brownie recipe to hand over?  Fudgy, decadent, rich, and yet a generous slab only clocking in at 200 calories.  Excited yet??  You should be.  This is my new go-to chocolate recipe when I find myself craving something satisfying and delectable but without all the extra calories.

Pumpkin Pie Paleo Pancakes

As most of you know who have looked at this blog, I love pancakes.  They are one of the main foods dominating my foodie fantasies.  I cannot get enough of this fluffy, lightly sweet, blank-canvas-begging-for-all-manner-of-toppings dish.  Pumpkin is also another favorite over here.  So versatile and yummy.  Cheesecakes, donuts, pastas, lasagnas, cookies and yes, pancakes, all made with pumpkin are just the bomb.

This morning, I discovered what is likely to become my new go-to pancake recipe.  Grain-free, lactose-free, sugar-free and nearly raw, this is an awesome one.  The two magical ingredients in these are canned pumpkin and almond flour (aka ground almonds).  Clocking in at about 250 calories for 4 pancakes, these guys are a sweet deal.

I was skeptical, imagining the taste plain and boring.  Nope.  It was as though eating pumpkin pie, with strawberries on the side and syrup on top.  I downed the entire plate in minutes and was dying for more.  YUM.
