Pesto Quinoa Bowl With Egg, Tomato, & Kale

Hi all,

Happy winter months.  It’s the ideal time for all things 1. easy to whip up and 2. cozy and delicious.  This quinoa bowl will do just the trick.  It can be made in less than a half an hour, it tastes awesome, it’s grain-free, gluten-free, and sugar-free, with a small amount of dairy in the pesto (assuming you use regular pesto, which has cheese in it).

Make extra so you have a totally tasty lunch for work tomorrow too!

Paleo Blueberry Buckle Cake

Oh my gosh, is this stuff tasty!  Initially I worried about it being a bit bland or of an odd texture, as its made with almond and coconut flours.  However, the end result was a moist, cinnamon-y, lightly sweet, blueberry laden, divine cake!  Or, blueberry buckle, if you will.

While slightly involved, its overall, an easy one to toss together.  A fun interplay of textures going on here too, with the crunch of walnuts on top, the spongy cake texture, the burst of fresh berries on biting into them.

On whipping this up, you will be gifted with having something scrumptious to accompany your wintery warm drinks with each afternoon for the week.  Enjoy!

Crustless Veggie & Cheese Quiche

This one looks humble and unimpressive, but it is TASTY!  Made with kale, zucchini, and lots of cheese.  Yes, please.  Its fluffy, light, cheesy, oh so satisfying and good.  This one is gluten/grain free, and of course, sugar free.  I use dairy-free milk, though the cheese of course has lactose.  Thus, if you wish for a lactose-free quiche, I recommend either no cheese or vegan cheese.

Paleo Pumpkin Donuts

Tis the season.  With autumn well under way, all things pumpkin have arrived in explosion, showcased in abundance on any and many menus.  Pastas with pumpkin, quinoa bowls with chunks of pumpkin among other autumnal flavors and ingredients, pumpkin lattes, pumpkin cheesecakes, pumpkin muffins, and of course, pumpkin donuts.

There is something about the color, that warmth induced coziness via the brilliant orange shade.  As well as of course, the spiced flavor of pumpkin desserts.  Laced through with cinnamon, cloves, ginger, all manner of comforting, cold weather friendly spices.

These pumpkin donuts?  Get super excited, because not only are they moist, cakey, delicious, subtly spiced, and easy to make.  But.  They are also gluten/grain free, lactose free, and low in sugar.  No guilt in enjoying one of these babies.  Clocking in around 250 calories each, frosting included (not an exact count, a very close estimate), they aren’t heavy on the calorie end for a sweet treat of this size and satisfaction inducing either 😉

It is my goal over the next few weeks to perfect the pumpkin donut (albeit, a gluten/grain free, low in sugar one.  My two stipulations).

In the meantime, this is a pretty darn good start.

Vanilla Bean and Lavender Rice Pudding

Beet, Goat Cheese, & Kale Quiche

4 Ingredient Chia Berry Pudding

Good morning, all!  Do I have the most awesome light, easy to make, totally tasty and super healthy breakfast (and/or snack) for you.  Chia pudding.  Never heard of chia seeds?  Its time you did.  Chia seeds are AWESOME for you.  They provide your body with (to name a few compelling benefits): omega 3 fatty acids, are rich in antioxidants, and they provide fiber, calcium, and iron to your body.  Plus, they can reduce risk of obesity, diabetes, heart disease, and lower overall mortality risk.
