Blueberry & Blackberry Lavender Pancakes

Happy Summer, all!  Yes, yet another pancake recipe.  These ones bursting through with berry deliciousness.

In adapting a diet free of refined sugar for the next 3.5 weeks, a personal challenge of sorts (save for honey and maple syrup), I threw together this recipe as the thought of going more than a couple days without pancakes made my heart fall.  These are loaded with juicy berry goodness, laced through with the most subtle floral of lavender.

Gluten/grain free, lactose free, and with no refined sugar.  The most perfect of summer breakfasts with their varied purple and blue colors, along with the use of fresh berries, and their light, fluffy texture.

Cranberry & Chocolate Autumnal Pancakes

Autumn is officially here, and with it, you’re looking at an especially happy camper.  I’ve lamented my love of and romance towards this particular season in several blog entries on Travels and Trdelnik, so I wont go into too much depth here.  For a list of enticing, awesome seasonal activities though, here you go.  A recent entry listing several hopefully interesting and inspiring ideas for readers (in addition to waxing on about my adoration of this time of year).  In the meantime though, these pancakes.

Gluten/grain free, dairy free and sugar free.  Loaded with cranberries and pumpkin, two ultra healthy ingredients.  To name a few fun facts…apparently cranberries lower your risk of cancer, help increase urinary tract health, reduce inflammation, and are great for dental health.  Pumpkin, don’t even get my started on this one.  I love it.  A couple of the supposed health benefits: pumpkin is great for joint health, reducing inflammation, helps protect the eyes, and is great for your skin- giving it a glow and preventing premature aging.

Back to the pancakes and how to make this mouthwatering dish.  Its an easy one.  I eat these several times a week (in varying flavor varieties).  I’m willing to bet after sampling them, you might be tempted towards doing the same…;-)

Buckwheat Blueberry Chocolate Chip Pancakes

Hi all!

Yes, another pancake recipe.  This one is an old school variety (blueberry), traditional, well loved by most.  But given a modern makeover, a health conscious update with the use of buckwheat flour.  Which, unbeknownst to most, isn’t a wheat or grain at all but is actually a fruit seed.  Making this dish entirely gluten/grain free and REALLY healthy for you!

Blueberry Lavender Poppyseed Pancakes

Happy summer, all!

I know, I know, yet another pancake recipe.  This one is to die for though, whoa.  Having to actively hold myself back from eating several (as I need them for brunch with friends tomorrow ;-)).  These guys are loaded with a variety of fun flavorings and ingredients.  Juicy blueberries.  The barest hint of floral with a sprinkling of lavender.  Poppyseeds, mostly for photogenic purposes.  A dash of cinnamon, nutmeg and ginger.  A capful of vanilla extract.  Get excited, these babies are super yummy.

And on top of all that awesomeness?  They are grain-free, dairy-free and sugar-free.

Moody Berry Buckwheat Pancakes

Hi all,

These blackberry & blueberry pancakes are just to thing for any and all lazy, romantic, delicious weekend brunching.  Anyone who has looked through my other recipes will be unsurprised at seeing yet another pancake recipe this week.  I do have a slight love affair with them in any and nearly all flavors.  (To name my favorites: Matcha and Raspberry, Pumpkin Oat, Paleo Carrot Banana, and finally, Pumpkin Pie pancakes).

Now adding onto the list of my favorites, these dark berried pancakes are lightly sweet, juicy, moist and totally tasty.  They are grain-free, lactose-free and sugar-free.  And yet taste, bite for bite, like the pancakes you would find in any high quality restaurant except that these are awesome for your health!

Did you know that buckwheat is actually a fruit seed?  Its not a grain at all, instead coming from the same family as rhubarb.  And, did you further know that buckwheat is amazing for your body!?!  Good for cardiovascular system, helps control blood sugar and may lower ones risk of diabetes, helps in preventing gallstones, and has health promoting potential that is equal to or even higher than that of some fruits and vegetables.  How cool is that?

Pumpkin Oat Buckwheat Pancakes

Its always the perfect time for all things pumpkin flavored!  This is one of my absolute favorite ingredients to both cook and bake with.  Pumpkin pastapumpkin cheesecakepumpkin pie…I cannot get enough!!  And autumn is not the only ideal time for chowing down on this super good-for-you ingredient.  Much like that silly myth with regard to not wearing white after labor day (who thought of that one, seriously), while pumpkin does tend to be a flavor that goes hand in hand with fall, I think it can and should be eaten in abundance throughout the entire year!!

Here is to luxurious Sunday mornings, brunches that stretch on throughout the morning, breakfast in bed and all things cozy.

This recipe (#36) is refined sugar-free, gluten-free AND lactose-free.  Woo hoo!!!  You can also throw together the batter in less then 10 minutes.  Hows that for outstanding?
