So Yum and Healthy Carrot Banana Pancakes

Hi all,

As you can see, I’m having a bit of a pancake moment yet again ;-).  No surprise, eh?  These pancakes are one of my best variety for several reasons: grain/gluten free, lactose free, and no refined sugar.  Also, super easy to make, light and fluffy, low in calories, and ultra healthy.  Did I mention they are lightly sweet (naturally) and totally delicious?

They taste awesome topped with berries and maple syrup.  Get excited, and enjoy!

The perfect anytime entrée.  Whether for a quick and tasty breakfast, a sugar free but satisfying dessert-like snack, an easy meal to make while camping, or refusing to sacrifice your love of pancakes in the mornings while wishing to keep it on the leaner side, these are for you 😉

Blueberry Ricotta Pancakes

Inspired by and adapted from the book “Hungry for Change: Ditch the Diets, Conquer the Cravings, and Eat Your Way to Lifelong Health,” by James Colquhoun and Laurentine Bosch (which was excellent, by the way.  I recommend reading this if you are interested in the topics of health and nutrition.  Its an easy, quick but informative and inspiring read), I give you these fluffy, light, absolutely delicious blueberry ricotta pancakes.

Grain/gluten free, and low in sugar, these are basically great for you.  Yet they totally hit that pancake hankering spot one feels on weekend brunching mornings (at least that’s my quintessential weekend (and actually, weekday as well) morning ;-)).

Sweet Potato Pancakes

Hi all,

Long time, no post, I know.  With the ushering in of autumn and the beginning of October, I thought something with sweet potato would make for the perfect autumnal entrée.  This dish can wear many hats, from sweet snack, to breakfast for dinner or dessert, to one of many platters scattered across the table in a weekend brunching extravaganza.

Super easy to make, filling, lightly sweet, grain free/dairy free and healthier than your typical pancakes.  However, still just as scrumptious.

Crash course on Paleo

This particular lifestyle has begun to receive a fair amount of hype over the last couple years, while just recently exploding into major trendiness.  Both receiving lots of good as well as bad press.  Is there any meat behind the supposedly life changing claims?  What are the benefits along with the potential pitfalls?  While not personally following a Paleo diet (though I do dabble), enough of my recipes fall under the umbrella of this particular lifestyle that make it fitting to post a short and sweet descriptor of what Paleo is and why it seems loads of people are jumping on the bandwagon.

Coconut Blueberry Pancakes

Hi all,

Happy weekend!  You know what that means…pancake time!  Here’s a spin on my latest recipe but with blueberries.  Summertime means berry pickin and eatin.  Plus lighter recipes.  This one fits the bill on all accounts.  Light, fluffy, lovely.  Yet grain/gluten free, dairy free and sugar free.  Yum, yum!

Coconut Turmeric Pancakes

My first coconut flour pancakes!!  I have to say, these are far lighter and fluffier than buckwheat ones are.  Buckwheat pancakes are delectable, filling and bready.  Tasting totally like the real deal, grain and all (yet, without any ;-)).  However the coconut pancakes offer a different texture.  I am loving the lightness to them.

Loaded with majorly healthy ingredients.  To start, coconut flour.  For a short list of health benefits on this gluten free flour alternative, check out this link.

Second, turmeric.  What’s being touted as a new superfood and for good reason.  To name just a few of the health benefits potentially earned by consuming this spice: can help prevent breast cancer and skin cancer, a natural painkiller, may aid in boosting metabolism, is used in Chinese medicine to treat depression, etc.  Whoa.  Who knew a single spice could be chock full of such power.  For a full list of way cool benefits, check out this link.

Now, how to make these tasty treats:

Pumpkin Pie Paleo Pancakes

As most of you know who have looked at this blog, I love pancakes.  They are one of the main foods dominating my foodie fantasies.  I cannot get enough of this fluffy, lightly sweet, blank-canvas-begging-for-all-manner-of-toppings dish.  Pumpkin is also another favorite over here.  So versatile and yummy.  Cheesecakes, donuts, pastas, lasagnas, cookies and yes, pancakes, all made with pumpkin are just the bomb.

This morning, I discovered what is likely to become my new go-to pancake recipe.  Grain-free, lactose-free, sugar-free and nearly raw, this is an awesome one.  The two magical ingredients in these are canned pumpkin and almond flour (aka ground almonds).  Clocking in at about 250 calories for 4 pancakes, these guys are a sweet deal.

I was skeptical, imagining the taste plain and boring.  Nope.  It was as though eating pumpkin pie, with strawberries on the side and syrup on top.  I downed the entire plate in minutes and was dying for more.  YUM.

Happy Sunday brunching!!

Either way though, these pancakes are worth making.  For the health benefits, short list of ingredients and yummy taste.

Paleo Carrot Cake Pancakes

For about 7 weeks straight last year, I ate these almost every day.  They are so tasty, surprisingly addicting, and they are REALLY healthy.  No gluten, no lactose and they are free of any refined sugar.  I would usually whip up a batch and then consume the entire thing in one sitting.  I recommend these topped with maple syrup and homemade whipped cream.
