Pepper and Pancetta Piperrada

Fresh bell peppers shine in this recipe, a Spanish-influenced dish fitting for any meal.  I fixed this for Sunday brunch; the savory flavors working nicely in pairing with the velvety eggs.  If your knife skills are sharp, you can whip this up in 30 minutes, an easy preparation for sure.  The recipe is derived using this original for inspiration.

I had been seeking the opportunity to put Brooke to the test after I learned that she is somewhat picky about her Bell peppers.  I myself had never appreciated the subtleties in their flavor over the range of colors in which they are available.  A fortuitous family pack of peppers at the grocery store afforded me the opportunity to buy a quartet of them; green, red, yellow, and orange.  When preparing the dish, I reserved samples of each and administered a blind taste test.  Brooke correctly differentiated her least favorite, the green pepper, at first, before being swayed by the flavors of the orange.

Ultimately, she identified the similar tasting peppers: orange and green, and yellow and red, only she reversed her selections within those two pairs.  I was impressed overall after being skeptical in her ability to distinguish the peppers by color.

Sweet Potato, Bacon and Egg Bowl

Ready for the easiest and tastiest breakfast you’ve ever had?  Here goes.  Just five ingredients needed.  Super healthy, rich, filling, SO yum.  I eat this one several times a week.  And imagine that after sampling it, you might find yourself doing the same ;-)Delicious and keeps you full for hours afterward.

This recipe serves one person so for two people, just double everything.  This entrée is Paleo, Whole30, grain/gluten free, dairy free and sugar free.  Enjoy!!

Devilish Eggs

Hi all,

Have I got a light, easy, ultra healthy dish for you.  This one can also be aptly titled “eggs in hell” if you prefer.  I realize this dish isn’t the prettiest of faces, but for what it lacks in looks, it makes up for in taste.  Essentially raw, and hitting all the other major health points as well (grain-free, lactose-free and sugar-free).  You’ll feel full, satisfied and all the while, enjoying the taste of what you are eating.  Imagine that!  The perfect dish in tandem with approaching spring.

The Healthiest Carrot Banana Pancakes

I know.  Sounds like an oxymoron, doesn’t it?  Healthy pancakes.  I assure you, it isn’t.

Ready for the healthiest, lightest in calories pancakes you have ever eaten?  And yes, believe it or not, they still taste awesome.  These babies are gluten-free, lactose-free and sugar-free.  They are filling and awesome for your health, chock full of good-for-you stuff.  Topped with berries, they are especially delicious.

They are Paleo and Whole30 compliant as well, if that matters to you.

What the heck is Whole30?  Some of you might be wondering.  I was asking myself the same question about two weeks ago.  Essentially, its a one-month detox for your body.  Here is a short article that describes in further detail what, exactly, is Whole30 and why on earth might you consider giving it a try.

Either way though, these pancakes are worth making.  For the health benefits, short list of ingredients and yummy taste.

Basically, these pancakes are the bomb.  They cover all sorts of special diet specifications, are easy to make and totally tasty.  Enjoy!
