Tacos are one of the best dishes on the planet. However, in consuming a diet largely void of grains/wheat/bread, this makes continuing my love affair with said hand held treat a tough one. However, to my relief and thrill, I found the most delicious recipe. Granted, these are more toastados than taco, but man oh man, are they tasty. Totally on par with and hitting the taco spot, though without the bad-for-your-body ingredients.
Grain/gluten free, lactose free, sugar free, these are a homey, scrumptious meal that is also awesome for your health!
Ingredients
For the toastados:
-2.5 cups almond flour
-1 teaspoon of sea salt
-A generous sprinkling of garlic powder
-1/2 teaspoon of baking soda
-2 teaspoons of chopped cilantro OR, I used a few shakes from an “Everything but the Bagel” seasoning instead- SO good
-2 large eggs
-2 tablespoons olive oil
For the taco toppings:
-Any fish of your choice. For one person, maybe 3-4 ounces. For two people, maybe 8 ounces.
-1 can of cannolini beans, rinsed and drained
-1 avocado (recommended)
-Cherry tomatoes, sliced in half
-1/2 cup of chopped red onion or shallots
-Salsa (recommended)
- Mix together the almond flour, sea salt, garlic powder, baking soda, and either cilantro or “Everything But the Bagel” seasoning, all together in a bowl.
- Add the two eggs and olive oil. Stir until everything is well combined and a sticky though moist dough has formed.
- Form the dough into pancake-like shapes, though not too thin. They should be akin to a somewhat slim cake layer. Place them on a parchment paper covered baking sheet. Bake in the oven on 350 degrees F for about 15-18 minutes.
- Meanwhile, cook the fish in a skillet via stove top on medium heat. This should take maybe 7-10 minutes, depending on the type of fish (unless you choose salmon, in which case I recommend in the oven). If unsure, Google “how to best cook ___.” You fill in the blank with fish of choice.
- While the fish is cooking, in a separate small frying pan, add a tablespoon of oil and then cook (over medium heat) the cannolini beans, the cherry tomato halves, and the chopped onions. Stir occasionally. These will take maybe 6-7 minutes.
- Once everything is finished, which should be around the same time, assemble!
Pile atop the finished and slightly cooled toastados: cooked fish, beans/tomatoes/onion mixture, avocado, salsa, sour cream if you like, some kind of chipotle mayo would also be delish. Whatever you think sounds yummy, the building of your dream taco is at your command 😉
